Potato salad with lime



600 g / 21 oz potato with firm flesh
150 g / 6 oz peas
10 small radishes
Zest and juice of 1 lime
120 ml / 5 oz vegetable stock
Salt and freshly ground pepper
40 ml / 1,5 fl oz of BIO PLANETE virgin Avocado oil


Cook the potatoes in salted water, peel and cut into thin slices. Blanch the peas in salt water -
they must keep their crunch. Grate the rind of lime, mix with the stock, lime juice and BIO PLANÈTE
avocado oil. Season. Allow to rest for a few hours at room temperature.

Tip : Serve with a fish fillet meunière.
