“Caprese” Protein Pizza

For 1 pizza

Ingredients for the dough

150 g Protein Walnut Flour
100 g whole wheat flour
Roughly 125 ml warm milk
21 g fresh yeast
1 egg
60 g BIO PLANÈTE Olive Oil Extra Virgin 
1 tsp. salt
1 pinch of sugar

Ingredients for the topping

Cherry tomatoes (roughly 150 g, as preferred) 
Mini mozzarella balls, halved
2 tbsp. green pesto
Tomato sauce
Salt and pepper

Mix together wheat flour, sugar and warm milk and knead. Dust the dough lightly with flour and leave to rest in a warm place for 15-20 minutes, until cracks appear in the surface.
 
Add Walnut Flour and remaining ingredients and knead in well. Cover the dough with a damp cloth and leave to rise for 30 minutes, then knead the dough again on a surface dusted with flour and roll out. 

To make the “Caprese” pizza, first spread tomato sauce over the base, then halve the tomatoes and distribute over it with the mozzarella, adding pesto according to taste. Finally, bake the pizza at 180° C / 350° F for 20-25 minutes.
