Coconut Truffles

For 4 people

 

Ingredients

2 small sweet potatoes (approx. 300 g)
½ Bunch Flat parsley
½ Lime
50 g cashew nuts
50 g BIO PLANÈTE Coconut Oil
salt and pepper 

 

Peel the sweet potatoes. Cut them into pieces and steam it until they are soft. Drain and puree with coconut oil, ground cashew nuts, chopped parsley and the juice of lime. Season with salt and pepper.
