Lentil Salad

For 1 Person

Ingredients

50 g green lentils
1 small sprig of thyme
½ red pepper
4 radishes
½ avocado
1 teaspoon of lemon juice
1 spring onion
1 tbsp parsley
2 handfuls of lamb’s lettuce (Varienella locusta - also known as corn salad, or rapunzel)
2 tbsp BIO PLANÈTE Omega Blue

Cook the lentils according to the package instructions with a sprig of thyme, and then drain. Wash the vegetables and cut them into thin slices or strips. Then put the lamb's lettuce and the vegetables in a bowl. Garnish with lemon juice, parsley and Omega Blue. Season to taste with pepper and salt.
