1 ripe mango
500 ml of fresh cream or soy cream
4 g/ 2 tsp. powdered agar
100 g/ 3,5 oz of fine sugar
1 tbsp. BIO PLANÈTE Sesame Oil
4 pinches of sesame seeds
Peel the mango, dice and purée. Stir half of the powdered agar into about three tbsp. of cold water until smooth. Heat the mango purée in the pot. Stir in the agar mixture with the whisk and simmer for two minutes, stirring constantly. Put the finished mango mixture into the loaf pan, spread out and refrigerate for about 20 minutes.
Place the rest of the ingredients in a saucepan and mix. Heat the pan and simmer everything for 5–8 minutes. Spread the mixture on top of the mango base and leave to cool. Before serving add the sesame pinches.
