PDO: The “protected designation of origin” confirms that the production, processing and manufacture of a product takes place in a specific geographic region based on recognised and stipulated, often traditional processes. The Italian equivalent is “D.O.P., Denominazione d’Origine Protetta”. PGI: The “protective geographic indication” confirms that at least one of the production steps – i.e. production, processing or manufacture – took place in a specific country of origin.
